New Year's Pretzel Recipe from Tough Cody's Bakery
While I am the creative force behind Canoe Place Creative and Lacey Barber Photography, my husband is a creative force in the kitchen. He's a talented baker and chef. We are not big on traditions. We don't really do holidays or birthdays but we do make pretzels on New Year's Eve for family and friends.
Anyway, I get annoyed with recipe blogs when they write a novel before giving you the recipe so here it is:
For the Dough:
1 1/2 Cups Warm Water
1 Tablespoon Sugar
4 1/2 Cups (22 oz.) Flour
2 oz. Melted Butter
2 1/4 Tablespoons Yeast
For Boiling:
10 Cups Water
10 Cups Water
2/3 cup Baking Soda
1 Tablespoon Molasses
1 Tablespoon Sugar
1 Egg for Egg Wash (Optional but Recommended)
Directions:
To the mixer bowl, add water, sugar, salt, and yeast. Mix on low for about 5 minutes.
Add flour and butter and mix until combined. (Approx. 4 or 5 minutes)
Remove dough from the mixer and add to large oiled bowl, making sure the entire dough ball is coated with oil.
Cover with plastic wrap and let the dough rest for about 50 minutes. It should double in size.
Preheat your oven to 450.
In a large pot, combine water, baking soda, molasses, and sugar and bring to a boil.
Roll your pretzels!

This was my job in the process. Cody says I have a signature roll, but in reality I just don't know what I'm doing. I genuinely don't think it matters how they get rolled. Have fun with it!

Boil the pretzels for about 30 seconds on each side. My brilliant husband set the timer on the microwave for 20 minutes just as a ticker to keep track of 30 second increments. This system is perfect for anyone who doesn't feel like county to 30 over and over again.

Egg Wash - We did a batch of these without an egg wash and they taste just fine, but this step just makes them so much prettier.
Bake for 12-14 minutes at 450 or until they look like golden brown pretzels.

We gave these as gifts and didn't want the salt to get lost in transport so we gave everyone little bags of fancy salt. For reheating, the just spray the pretzels with a little cooking spray or water and sprinkle salt on before popping them in the oven.
